Haitian Fried Chicken

Ingredients

12 Chicken drumsticks
3 Limes; Juice and set juice and peels aside
1/4 cup Vinegar
5 cloves Garlic
1 small Leek
1 small Hot chili pepper
1 teaspoon Salt
2 cubes Chicken bouillon
3/4 teaspoon Black pepper
1 cube Vegetable bouillon
1 tablespoon Vinegar
1/4 cup Butter
Original recipe makes 6 Servings

Directions 

Squeeze limes. Set the juice and peels aside. Clean the chicken, leaving the skin on. Rub the lime on the chicken. Pour 1/4 cup vinegar over chicken. Wash the chicken off. Set aside.

Wash cloves of garlic. Mash garlic in pestle. Add leek and mash into garlic. Mash in hot pepper with the garlic and leek. Add salt and chicken bouillon. Put all mashed stuff in a big bowl. Add lime juice and 1 tablespoon vinegar. Rub on the chicken to marinate. Start boiling a pot of water. Pour on the chicken, just about to cover. Add butter. Return to the stove. When chicken is just cooked, take off stove and set aside. Peel the skin off of the chicken and set aside with the chicken broth. Fry chicken in hot oil until cooked through.
